- 3 medium overripe bananas (about 1 ½ cups, mashed)
- 2 large eggs
- 1 ½ cups all-purpose flour (or gluten-free alternative)
- ¾ cup granulated sugar (or substitute with brown sugar, honey, or coconut sugar)
Instructions
- Preheat oven to 350°F (175°C). Grease a 8.5 x 4.5-inch loaf pan or line it with parchment paper.
- Mash the bananas in a large bowl until mostly smooth. A few small lumps are fine.
- Add the eggs and whisk until well combined.
- Stir in the sugar and mix until dissolved.
- Gradually add the flour, stirring just until combined. Do not overmix.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes
- The riper the bananas, the sweeter the bread!
- For a crunch, add ½ cup of chopped walnuts or pecans.
- Want extra moisture? Mix in ¼ cup of Greek yogurt or applesauce.
