- 4 medium russet potatoes, peeled and diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups whole milk
- 2 cups shredded cheddar cheese
- 1 tbsp butter
- 2 tbsp flour
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional)
- ½ cup sour cream (optional)
Instructions
- Brown the Beef: In a large pot, cook ground beef over medium heat until browned. Drain excess fat.
- Sauté Aromatics: Add butter, onions, and garlic. Cook until soft and fragrant.
- Cook the Potatoes: Add diced potatoes, salt, pepper, and paprika. Pour in broth and bring to a boil. Reduce heat and simmer for 15-20 minutes until potatoes are tender.
- Make It Creamy: In a small bowl, whisk flour into milk. Stir into the soup and let it thicken for 5 minutes.
- Melt the Cheese: Remove from heat and gradually stir in shredded cheese until fully melted. Stir in sour cream if using.

Notes
- For a spicier kick, add red pepper flakes or swap cheddar for pepper jack cheese.
