Description

This chicken caesar sandwich is warm, cheesy, and crisp, packed with juicy marinated chicken, homemade Caesar dressing, and romaine on golden toasted bread. Perfect for a quick weeknight dinner or weekend treat.

For the Chicken:

  • 3 boneless skinless chicken breasts

  • 5 tbsp olive oil

  • 1 tbsp dried oregano

  • 3 garlic cloves, crushed

  • Juice and zest of ½ lemon

  • 1 tsp kosher salt

  • ½ tsp black pepper

For the Dressing:

  • 1 large egg

  • ¾ cup light olive oil

  • 2 garlic cloves

  • 2 anchovy fillets (optional)

  • ½ tsp Dijon mustard

  • ¼ cup lemon juice

  • 1 tsp salt

  • ½ tsp black pepper

For the Sandwiches:

  • 8 slices sourdough or gluten-free bread

  • 6 oz mozzarella, sliced

  • 2 oz parmesan, shredded

  • 4 tbsp olive oil

  • 2 tbsp butter

  • Romaine lettuce

  • Optional: marinated red onions


Instructions

  1. Marinate the chicken: Mix oil, oregano, garlic, lemon, salt, and pepper. Coat chicken and marinate for at least 1 hour.
  2. Cook chicken: Sear in a pan 5 minutes per side, cover, and cook 4 more minutes until done. Let rest, then slice thin.

  3. Make dressing: Blend egg and oil with a hand blender. Add garlic, anchovies, mustard, lemon, salt, and pepper. Blend until creamy.

  4. Toast bread: In a skillet, melt butter and oil. Toast bread until golden and crispy.

  5. Assemble: Layer cheese and chicken between toasted bread. Cook in the skillet until cheese melts. Add romaine, dressing, and onions before serving.
