This chicken caesar sandwich is warm, cheesy, and crisp, packed with juicy marinated chicken, homemade Caesar dressing, and romaine on golden toasted bread. Perfect for a quick weeknight dinner or weekend treat.
Ingredients
For the Chicken:

3 boneless skinless chicken breasts

5 tbsp olive oil

1 tbsp dried oregano

3 garlic cloves, crushed

Juice and zest of ½ lemon

For the Dressing:

1 large egg

¾ cup light olive oil

2 garlic cloves

2 anchovy fillets (optional)

½ tsp Dijon mustard

¼ cup lemon juice

1 tsp salt

½ tsp black pepper
For the Sandwiches:

8 slices sourdough or gluten-free bread

6 oz mozzarella, sliced

2 oz parmesan, shredded

4 tbsp olive oil
-
2 tbsp butter
-
Romaine lettuce

Optional: marinated red onions
Instructions
- Marinate the chicken: Mix oil, oregano, garlic, lemon, salt, and pepper. Coat chicken and marinate for at least 1 hour.

Cook chicken: Sear in a pan 5 minutes per side, cover, and cook 4 more minutes until done. Let rest, then slice thin.

Make dressing: Blend egg and oil with a hand blender. Add garlic, anchovies, mustard, lemon, salt, and pepper. Blend until creamy.

Toast bread: In a skillet, melt butter and oil. Toast bread until golden and crispy.

Assemble: Layer cheese and chicken between toasted bread. Cook in the skillet until cheese melts. Add romaine, dressing, and onions before serving.
