Description

This marry me chicken soup is creamy, rich, and full of comforting flavors. Made with tender shredded chicken, sun-dried tomatoes, parmesan, and a touch of cream, this one-pot meal is ready in just 30 minutes. Perfect for a cozy dinner that everyone will love!

Soup Base:

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 (6-ounce) can tomato paste
  • 1 quart (4 cups) chicken stock
  • 2 cups water
  • 1 teaspoon sugar
  • ⅓ cup sun-dried tomatoes, chopped
  • 3 cups cooked, shredded chicken

Add-Ins:

  • 2 cups uncooked ditalini or small pasta
  • ½ cup heavy cream
  • ⅓ cup grated parmesan cheese
  • 2 cups fresh spinach
  • 1 teaspoon red wine vinegar
  • Salt & black pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and sauté for 3-5 minutes until soft. Stir in garlic and thyme.
  2. Add tomato paste and cook for 1 minute, stirring constantly.
  3. Pour in chicken stock and water, scraping up any browned bits from the bottom.
  4. Stir in sugar, sun-dried tomatoes, and shredded chicken. Bring to a gentle simmer.
  5. Add pasta and cook uncovered, stirring occasionally, for 8-12 minutes until tender.
  6. Reduce heat to low and stir in heavy cream, parmesan, and red wine vinegar. Let it warm through.
  7. Toss in fresh spinach and stir until wilted. Taste and adjust seasoning as needed.
  8. Serve hot with extra parmesan on top and a side of garlic bread.

Notes

  • For a dairy-free version, use coconut milk instead of heavy cream and nutritional yeast instead of parmesan.
  • To make it low-carb, swap pasta for zucchini noodles or cauliflower rice.
  • For meal prep, store leftovers in an airtight container in the fridge for up to 4 days.
