- 2 large eggs
- 1/2 cup honey or maple syrup
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1/4 cup melted coconut oil
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a large bowl, mix oats, flour, baking powder, cinnamon, and salt.
- In another bowl, whisk together eggs, honey, applesauce, vanilla, and melted coconut oil.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Let the batter rest for 10 minutes.
- Spread the batter evenly in the baking dish and bake for 20-25 minutes until the edges are golden brown.
- Let cool for 15 minutes, then cut into squares. Enjoy!
