Ingredients

3 cups rolled oats

1 cup mixed nuts (almonds, pecans, or walnuts), chopped

1 ½ tsp ground cinnamon

½ tsp sea salt

½ cup maple syrup

⅓ cup coconut oil

2 tsp vanilla extract
Instructions

Preheat oven to 325°F (163°C). Line a large baking sheet with parchment.

In a large bowl, mix oats, chopped nuts, cinnamon, and salt.

In a saucepan, melt coconut oil, then stir in maple syrup and vanilla.

Pour the wet mix over the dry ingredients and stir well.

Spread evenly on baking sheet.

Bake for 25–30 minutes, stirring halfway.

Let cool completely before breaking into clusters.

Store in an airtight jar for up to 2 weeks.

- For a nut-free version, swap nuts for pumpkin seeds or sunflower seeds.
