Ingredients

  • 3 to 5 lbs ribeye roast (bone-in or boneless)
  • 2 tbsp olive oil (or melted butter)
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried rosemary
  • 1 tsp dried thyme

Instructions

  1. Preheat oven to 450°F (232°C).
  2. Prepare the roast by patting it dry and letting it rest at room temperature for 1 hour.
  3. Season the meat by mixing olive oil, garlic powder, onion powder, salt, black pepper, rosemary, and thyme. Rub all over the roast.
  4. Sear the roast in a cast-iron skillet on all sides for 1-2 minutes.
  5. Roast at 450°F for 15 minutes, then reduce heat to 325°F (163°C) and cook for 20-25 minutes per pound for medium-rare.
  6. Check the internal temperature:
    • Rare: 120-125°F
    • Medium-Rare: 130-135°F
    • Medium: 140-145°F
  7. Let it rest for 15-20 minutes before slicing to retain juiciness.
  8. Slice against the grain and serve with your favorite sides!
