Description
This fresh and crunchy sweet kale salad kit is packed with greens, dried fruit, and seeds, all tossed in a creamy homemade poppyseed dressing.
Ingredients
For the salad:

2 cups chopped kale

1 cup shredded green cabbage

½ cup shredded Brussels sprouts

1 cup broccoli slaw

⅓ cup dried cranberries

¼ cup roasted pumpkin seeds
For the poppyseed dressing:

¼ cup plain Greek yogurt

2 tbsp honey
-
2 tsp apple cider vinegar

1 tbsp olive oil
-
1 tsp Dijon mustard
-
1 tsp poppy seeds

Pinch of salt
Instructions

Wash and dry all greens thoroughly.

Chop kale into bite-sized pieces, removing tough stems.

In a large bowl, mix kale, cabbage, sprouts, and broccoli slaw.

Add cranberries and pumpkin seeds.

In a small bowl, whisk together all dressing ingredients.

Pour dressing over salad right before serving and toss well.

Add protein or toppings of choice if desired. Serve chilled.
Notes
Dressing keeps in fridge for 5–7 days.
Add fresh fruit or cheese for variety.
